These are Colin’s cookies—he used to make them when we were dating. I’ve never actually made these, but I have eaten a lot of them. Oh the yumminess! Since they are a little complicated to make, here is a link to the recipe website so you can see what individual steps look like.

| Preheat oven to 350 degrees and line cookie sheets with parchment paper. | ||
| Flour Unsweetened Cocoa Powder Baking Soda | 1 1/2 cup 1/2 cup 1/2 tsp | Combine flour, cocoa powder, baking soda in bowl and set aside. |
| Butter, Softened Sugar Brown Sugar Peanut Butter Egg Vanilla Extract | 1/2 cup 1/2 cup 1/2 cup 1/4 cup 1 each 1 tsp | Cream butter at medium speed for 1 minute. Gradually beat in granulated sugar, then brown sugar, and finally peanut butter until well combined. Add egg, vanilla extract. Continue beating until well well blended. Gently stir in flour mixture. Shape dough into 1/4-inch balls and place on cookie sheet. |
| Powder Sugar Peanut Butter | 3/4 cup 1/2 cup | For filling, stir together powdered sugar and peanut butter until smooth. Shape mixture into 3/4 inch balls. Flatten each chocolate dough ball and top with peanut butter ball. Wrap chocolate dough over peanut butter filling so it completely covers the filling. Roll dough into balls, then slightly flatten them again. Bake for about 8 minutes until just set and the surface is slightly cracked. Cool cookies on baking sheets for 1 minutes before transferring them to wire racks to cool completely. |
